Paper & Pencil is looking for a dynamic Head Chef/ Kitchen Manager to lead our back of house staff and high volume kitchen operations at a competitive salary with paid sick time off.
Key Functions:
• Schedule and organize shifts to ensure adequate coverage and optimal productivity.
• Promote effective communication and teamwork among kitchen staff and other departments.
• Collaborate with owners to develop and update menus based on guest preferences, seasonal availability, and cost considerations.
• Monitor food inventory levels, place orders, and manage food costs
• Coordinate with the front-of-house staff to ensure smooth flow of service and resolve any issues or delays.
• Implement and enforce NYS health and safety regulations and workplace safety protocols.
• Assist in managing food and labor costs within the kitchen department to meet budgets.
• Evaluate the quality of ingredients and source new suppliers when necessary.
• Monitor and manage back of house inventory to minimize waste, ensure freshness, and prevent stock shortages.
Qualifications:
• Preferred 3 years’ experience as a Kitchen Manager, Executive Chef, Executive Sous Chef or CDC, preferably with a full-service property.
• Management and Culinary experience required
• Proficiency in Microsoft applications
